Smallanthus sonchifolius

Yacon (Smallanthus sonchifolius) is an edible tuber. It was an important food source for indigenous people for more than a thousand years. This plant grows at altitudes of 1000-3200 m a.s.l. This superfood is still used by the Andean people as a natural sweetener and is currently recognized as one of the best superfoods.

Its main components are fructooligosaccharides, polyphenols and inulin, making this product a superfood recognized for being an antioxidant, natural probiotic and low caloric sweetener.

Yacon also contains significant amounts of potassium and antioxidants, a high mineral content and a low sugar content.

Functionality

Yacon, unlike most tubers and roots that store carbohydrates in the form of starch, mainly stores them as fructooligosaccharides (FOS), a special type of sugar with attributes that are highly beneficial to human health. Yacon contains 30-70% FOS, which has been shown to be helpful in the digestion and absorption of nutrients.

Its most notable nutrients are fiber, vitamins such as vitamin A, B1, B2 and C, and essential minerals such as calcium, iron, potassium, magnesium and phosphorous.
